Walnut Snack Mix, also known as brain food. Like fish, but for snacking. Although some people do snack on fish.

The-Guy-Who-Knows-A-Song-About-A-Chicken says I'm snob against walnuts, and it's kind of true. But for whatever reason I still thought it would be a good idea to enter a recipe contest featuring walnuts. I don't know why. 

So I have to have one of those disclaimers saying they sent me the walnuts in order to develop a snack. Here it is:

Who wouldn't want improved cognitive function? It turns out that walnuts are brain food, just like fish! Only if you believe in suggestive research though.

There's a whole lot of other information the walnut people would like you to know too, like that they have four grams of protein per ounce and that they're the only nut with a significant source of essential omega 3, which I think is a reason that walnuts are brain food. 

In any case, my walnut snobbery may have been a bit premature. Maybe.

I made the recipe super easy in case you hadn't had any brain food recently. Don't worry, you'll probably feel a lot smarter after eating the snack.

First just mix up some eggs, walnuts, cinnamon and very little sugar. Just a little sugar, because otherwise the essential omega 3 might get canceled out.


Spread them on a parchment paper lined cookie sheet. And bake.

Then add dried cranberries, some O cereal like Cheerios, and a few chocolate chips. But very few because again, we don't want to cancel out the omega threes. 


If you put your mix into a Mason jar, it will look more full. Mine had already been snacked on:


Easy right? Here's the recipe:

California Walnut Snack Mix

1 Generous Cup California Walnuts  

1 Egg

1 Tablespoon Sugar

1/4 Teaspoon Cinnamon

1/4 Cup Dried Cranberries

3 Tablespoons Chocolate Chips

1/2 Cup Oat Cereal/Cheerios

Preheat oven to 250 degrees. Mix together egg, walnuts, sugar, and cinnamon. If there is a lot of extra egg, add another tablespoon or two of walnuts. Spread walnuts in a single layer on a cookie sheet lined with parchment paper. Bake for one hour, stirring every 15 minutes. Let cool and then mix with remaining ingredients.

And that's it for the snack mix. That's what's going on around here. Inventing snack mixes in order to enter contests. I do have a couple of new items up in my TPT store, but no one probably needs that until Rosh Hashanah.
